They are actually made of mashes potatoes, eggs and flour. So like a said earlier, they are the perfect way to use up leftovers. You can easily transform mashed potatoes into a whole new glorious golden potato pancake you can pick up with your hands. This makes them perfect for kiddos.

I love a little hack for making my like easier. I mean who doesn’t, especially when it comes to kitchen clean up. When I am peeling my potatoes, I like to add a trash bag inside my sink and peel into that. Then all I have to do is pull out the bag, tie it up, and throw it away. You can thank me later.

How do you make a Classic Mashed Potato Cake?

Classic Potato Cakes start with cold mashed potatoes, egg, flour, your favorite seasonings, such as onion powder, and salt and pepper to taste. Mix ingredients in a bowl until the batter forms. Your batter should be more on the thicker side. Heat 1/4-inch oil in large skillet. Once oil is up to temperature, drop 4-5 inch circles of batter into oil. Cook until golden brown on both sides.

Why do My Mashed Potato Cakes Fall Apart?

If you have tried making potato cakes in the past, and they were such a mess you gave up. Don’t worry, you are not alone. If you find your cakes are falling apart they may be too moist. Try adding in more flour. You want the cakes to be slightly sticky, but not so wet that they fall apart.

Old Fashioned Potato Cakes made with Mashed Potatoes

Ingredients

  • 3-4 large Potatoes
  • 1/4 cup Milk
  • 1/2 tbsp Dried Minced Onion
  • 1-2 Eggs
  • 3-4 tbsp Flour
  • 1/2 tsp Garlic Powder
  • 1 cup Oil for frying

Instructions

  • Peel Potatos and boil until tender. Drain water then add milk, minced onion, salt and pepper to taste. Mash potatoes and chill. You can also use leftover mashed potatoes (around 4 cups).
  • Mix potatoes, egg, flour, garlic powder or your favorite seasonings in a bowl until batter forms.
  • Your batter should be on the thick side. If too thin add flour.
  • Heat 1/4-inch oil in large skillet.
  • Once oil is up to temperature, drop 4-5 inch circles of batter into oil.
  • Cook until golden brown on both sides.
  • Serve hot and Enjoy!
