Tiramisu

This is such a delicious and easy dessert! My Belgian friends at @lacuisineaquatremains gave me their grandmother’s recipe, a famous Belgian chef, for the very best Tiramisu ever!

I had searched for a good tiramisu recipe for a very long time, but since I tried this one, I have never made any other!! My husband is a big tiramisu fan, so I make this quite often at home.

This is the original recipe, but you can pasteurize the yolks and sugar over a water bath until smooth and frothy.

The procedure is very simple: after beating the egg yolks and sugar, add the mascarpone cheese and finally the whipped egg whites. Dip the ladyfingers in hot coffee (with or without alcohol), place them on a serving dish, cover with half the cream cheese mixture, then another layer of ladyfingers and the remaining cream cheese. Dust with unsweetened cocoa powder and chill for at least 3 to 4 hours! Absolutely delicious!

Tiramisu

Ingredients
  

  • 500 gr mascarpone cheese
  • 4 egg yolks
  • 4 egg whites
  • 100 gr powdered sugar
  • 3 tbsp Marsala wine or Cognac (optional)
  • 100 ml strong coffee
  • 200 gr ladyfingers
  • 50 gr unsweetened cocoa powder

Instructions
 

  • Beat yolks and sugar until light and fluffy. (If you wish to pasteurize the yolks, you can do so by beating them over a water bath until smooth and frothy). Add the mascarpone cheese and mix well.
  • Whip egg whites until they hold stiff peaks and fold them into the cheese mixture. 
  • Grease a deep serving dish. Dip half of the ladyfingers in the hot coffee with the wine (optional) and line the bottom of the dish, spread half of the cream cheese mixture over them, cover with another layer of coffee-dipped ladyfingers and the remaining cream cheese mixture. Chill for at least 3 hours, and then place 30 minutes in the freezer before serving. Dust with unsweetened cocoa powder right before serving.
