Salată de Boeuf: Romanian Beef Salad
Salată de boeuf is a delicious Romanian appetizer, popular at celebrations as well as major holidays: Easter and Christmas. It’s quite similar to the Olivier & Russian salad.
The name comes from the French word “boeuf” meaning “beef”, which is one of the salad’s main ingredients. However, nowadays chicken is a popular replacement for beef so you can make this delicious salad with both chicken and beef.
The salad can be served as an appetizer or as a garnish for steaks. What’s very important in beef salad recipes is the homemade mayonnaise. It’s always better than the store-bought stuff, but make sure to use it with caution: it should bind the ingredients rather than soak them.

Salată de Boeuf: Romanian Beef Salad
Ingredients
Salad:
- 2-3 potatoes
- 1 parsnip
- 2 carrots
- 100 g cooked chicken or beef
- 3 pickled cucumbers
- 50 g peas
Homemade Mayonnaise
- 1 egg yolk
- 50-60 ml olive oil
- 2 teaspoon mustard
- 1/2 lemon Lemon Juice
Garnish
- olives
- slices pickled bell peppers
- salt
- pepper
Instructions
Instructions:
- Boil the vegetables and meat, then remove and allow to cool. Once cooled, chop them up finely.
- Chop the pickled cucumbers finely and add to the bowl.
- Boil the peas well and add them to the salad.
- Prepare the mayonnaise with egg yolk, mustard, lemon juice, salt, pepper and oil and put it over the salad.
- Beef salad can be garnished with olives, cucumber slices and parsley.
