Thai Celery Salad with Peanuts

Ingredients

tablespoons vegetable oil

tablespoons fresh lime juice

teaspoons fish sauce

celery stalks, thinly sliced on a diagonal

scallions, thinly sliced

1

red chile, such as Fresno, thinly sliced

1

cup fresh cilantro leaves with tender stems

¼

cup chopped roasted, salted peanuts

Preparation

  1. Whisk together oil, lime juice, and fish sauce. Toss with celery, scallions, chile, cilantro, and peanuts.

  • Had lots of celery so tried it. It is fantastic. No Fresno chili so substituted 1 T of chili crisp. I could eat this everyday!
