Processed Food Predators BEWARE

This recipe is an old classic. Therefor, I use these Kraft Old English Cheese Spread. This is a processed cheese that to me, is delicious and makes this recipe the classic that it is. I find this cheese everywhere. usually it is in the aisle with the Velveeta. If you are really triggered by this, you can use any cheese spread your little heart desires. You can still add the seasonings and herbs that I add. I encourage you to give this a try using the Olg English because it is delicious and nostalgic.

Old English Cheese Spread

The Celery

The celery is a KEY ingredient in this recipe. The sweet crunch of the celery pairs so well with the cheese spread. The one thing most people do not like about celery is that it is an unpleasant bite when it is stringy. This is why I give directions for peeling the strings from the celery pieces. You can do this with a vegetable peeler or by snapping it and peeling down the strings that expose themselves. See the pictures below for how I do this. You will love celery so much more after learning that it needs to be peeled.

Bend each piece, AWAY from the divot part.
The stringy part will expose itself, then just pull it downward
I use a ziploc bag to make a pretty pattern.
Use the less “stuffable” pieces and spacers and props for the stuffed pieces.

Ingredients

  • *See the post beyond the recipe card for pictures and links for any products you have questions on as well as pictures of the celery prep steps
  • 2 5 ounce jars of Kraft Old English Cheese Spread (or 10 ounces of any soft cheese spread)
  • 1 heaping tablespoon of mayo
  • 1 teaspoon of Worcestershire sauce
  • 1/2 teaspoon of horseradish (optional)
  • 1/2 tablespoon of dried, minced onion
  • 1/2 tablespoon of garlic powder
  • 1/4 teaspoon of cayenne pepper
  • 1/3 teaspoon of celery salt
  • 1/4 teaspoon of black pepper
  • 6 to 8 long pieces of celery
  • 2 green onions, finely sliced
  • Everything But The Bagel Seasoning for garnish

Instructions

  1. Prep your celery by washing it, pat it dry with paper towels. Trim the dried ends off and the leaves. Next, you want to peel the strings from the back of each piece. You can do this by either peeling the back with a vegetable peeler or you can bend the celery piece at the center, away from the part with the divot then pull the pieces away from each other. You will see the stringy parts exposed and you can pull them down and off each pieces. There are pictures of this in the post.
  2. You want to then cut the celery into even, 4 to 6 inch pieces. You want to then separate the pieces that have more room for stuffing and the ones that don't. You will use the ones that don't upside down on the plate as dividers and to hold the stuffed celery boats upright. (see pictures)
  3. In a stand mixer add your Old English cheese, then add the Worcestershire, mayo, and all the seasonings except the Everything But The Bagel Seasoning. You can also use a hand blender. Whip this cheese mixture until it is light and fluffy.
  4. If it is not as light and fluffy as you like, you can add a little more mayo and whip more.
  5. Add the cheese to a ziploc bag making sure to get the cheese into one bottom corner. You then cut a little bit of the tip of the corner off, and use this to squeeze the cheese into the celery pieces.
  6. Add these stuffed pieces to a plate or tray and then use the non-stuffable pieces in between each piece to hold the stuffed pieces in place. Turn them divot side down.
  7. You can also serve this as a spread or dip with the celery on the side.
  8. Sprinkle all the stuffed pieces with Everything But The Bagel Seasoning and the thinly sliced green onions.
  9. These can be assembled the night before and carefull covered and refrigerated until serving.
