Isn’t salad just lettuce and vegetables? “I get sore bored eating salad.”  I am sure those are thoughts that run through all our minds when we think of salad.  But this Strawberry Avocado Spring Salad is so much more.

This salad is full of flavor and texture, so much so, you will forget that you are eating a salad and the lettuce will become second fiddle to all the creamy goodness.

What dressing to you make for Strawberry Avocado Spring Salad?

  • You can use many different types of salad dressing, either homemade or store bought.
  • A lite vinaigrette is my favorite.  You can make a standard vinaigrette or choose to make or buy a strawberry vinaigrette, a poppy seed dressing, or even a greek yogurt dressing.

What is a salad?

  • A salad is a cold or warm dish that combines vegetables (cooked or raw), various types of meat, nuts, cheese, eggs, and fruit mixed with raw greens and dressing.
  • So in other words, a salad is a smorgasbord of tastes and textures layered with a particular kind of dressing to please our eating needs.

How do you make balsamic dressing?

Balsamic dressing is one of my favorite dressing to make because of it’s simplicity, wide variety, and the wallop of flavor it gives.

  • Combine balsamic vinegar, dijon mustard, avocado oil, extra virgin olive oil, sugar, and salt and pepper in a jar or container that can be sealed.
  • Shake all the ingredients vigorously to combine and store in the refrigerator until ready to toss with your salad.

How do you make Strawberry Avocado Spring Salad?

  1. In a glass jar add all the ingredients for the salad dressing, seal with a lid and shake to combine, set aside.
  2. Place your spring greens in a large salad bowl and add 3 tablespoons of dressing and mix.
  3. In another bowl add strawberries, feta cheese, red onion, almonds, and pecans and mix to combine.  Add strawberry mixture to spring greens and gently combined.  Add more dressing if desired.
  4. Top with sliced avocados and poppy seeds, serve immediately.

Is balsamic dressing good for you?

  • Balsamic dressing is a much better alternative than the thicker more fatty dressing you can make and buy.
  • It has fewer calories and with the vinegar is help to slow down digestion making you feel fuller faster, which in turn helps to prevent overeating.
  • Balsamic vinegar also has many health benefits associated with it.

Ingredients:

For the Salad

  • 1 pint fresh strawberries, rinsed and sliced
  • 5 oz spring mix greens
  • 1/2 cup crumbled feta cheese
  • 1/2 cup honey roasted almond slices
  • 1/2 cup honey roasted pecans
  • 1/2 red onions, sliced thin
  • 1 avocado sliced
  • poppy seeds to garnish

For the Dressing:

  • 2 Tablespoons balsamic vinegar
  • 1/4 teaspoon dijon mustard
  • 3 Tablespoons avocado oil
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon sugar
  • salt and pepper to taste

Directions:
