ingredients

  • 1 1/4 pounds cherries with stems
  • 8 ounces dark chocolate, or white chocolate

Method

  • Step 1

    Rinse the cherries and spread them out on a dishtowel or paper towel. Pat completely dry and chill for several hours before dipping. You want the cherries very cold!

  • Step 2

    Line a large baking tray with parchment paper or silpat.

  • Step 3

    Put chocolate in a small glass bowl. Bring an inch of water to a simmer in a medium pot. The pot should be the size that the glass bowl can fit over top without touching the water. Place glass bowl on top. Stir constantly as chocolate melts. Will take about 1 - 2 minutes for all the chocolate to melt.

  • Step 4

    Carefully remove the glass bowl from the pot using oven mitts as it will be hot. Dry the outside of the bowl and pour the chocolate into a tall narrow cup. This will make it easier to dip than using the bowl for dipping.

  • Step 5

    Grabbing the stem of a cherry, dip it into the chocolate, gently shaking off the excess. Set the cherry on the lined tray and repeat with the remaining cherries. Put the tray of cherries in the fridge as soon as the tray is filled. You can enjoy the cherries any time after the chocolate has hardened enough that you can peel the cherry cleanly from the parchment. Keep chilled until serving and enjoy!
