Deviled eggs should always be part of a holiday dinner. They look nice, are easy to prepare and make tasty hors d’oeuvres.
Here are some useful tips for easier and faster cooking process. Eggs that are not fresh are easier to peel. After boiling them for 10-12 minutes in salted water, let them cool for 20 minutes in iced water, give them a few taps on a hard surface, then place them again in the cold water for another 5-10 minutes. This will let some water seep under the shells and make peeling easier. |
After peeling the eggs, cut them lengthwise, remove the egg yolks and prepare the filling (for 6 eggs):
– 6 egg yolks – 2 tbsp. liver paté – 3 tbsp. cream cheese – 2 tbsp. sour cream – salt, pepper Mix well all ingredients. Fill the empty egg white shells and garnish with a parsley leaf. |
Vegetarian variation Instead of liver paté I used sheep cheese, and I added some fresh dill, too, and the combination was to kill for. Eyeball the quantities and don’t worry if you have leftover filling, you can spread it on bread and serve for breakfast or as a starter as well. |
